    Brisket Day

    So I obtained a nice 3.5lb brisket last night from a butcher in St. Paul by my place of work. Nice heft, could have used more fat on it, but still a great gristly hunk of nasty beef from the workaday part of the cow.

    Made up the dry rub and crusted it on thick, wrapped it in foil, set it in the fridge overnight.

    1pm today I fired up the Cameron's stove top smoker with a pile of Alder chips (all out of Hickory) and in went the crusty brisket. Kitchen smells lovely.

    2pm, opened 'er up, too cool, no drippings, so I upped the temp and closed 'er back up.

    Gonna be a long night.

    3pm. Temp a little low at about 130F. Still no drippings. A little more heat. Still smells wonderful.

    4pm. Temp a little over 140F. Great drippings, drained those with a turkey baster and squirted onto the dog's food.

    5pm, and all is well.

    6pm. Good temp, good drip, still smells great. next stop, the oven!

    10:14pm. The brisket has landed.

    Timeline updated.

    Well, 6 hours in the smoker, then 3 or so in the oven, it's looking like 10pm is eatin' time. I forgot to buy bread though, so bring some of that please.

    Not a problem! How about a nice ciabatta drizzled with olive oil, baked, then rubbed with garlic. Very tasty!

    Sounds wonderful! Pack it into a cooler, and pick up a quick ticket to California. We'll have cold Sam Adams winter lager waiting.

    Two loaves it is. And if we get the whole gang together at Bluesman's then it will be like old times! I'll bring the rum and coke as well! :P

    I hadn't planned on it - I was going to eat it this weekend. I'd bring in a piece for you if you'd try it, but I know you won't.
