The Face of Battle has a very detailed account of the incident. King Henry heard the rumor that the French executed an attack against English camp in the rear, in reality it was just a small band of straglers trying to grab some loot before they run for it. Affraid that the vast number of prisoners may attempt to break lose, he ordered the yeomen to execute some prisnors, presumably to keep them in line. The absolute majority of French knights did survive.

That wholely depends on the skill of fighters. Knight would have advantage because he is normally bigger with heavier weapon and steel armor. However, against a skilled samurai swordsman who yields armor cutting sword, samurai would win. Knight usually is slower, despite his size and strength.
