Hermes was IIRC not fitted with any armour at all, but was also described by her damage control officer during the Falklands conflict as something like "a great steel castle of a ship" and very difficult indeed to sink.
Aircraft carriers are very big ships and have to be built very strongly - this in itself provides a lot of armour protection. However, realistically in the days of guided weapons any armour beyond splinter protection won't do you any good as you'll be experiencing direct hits from half tonne warheads if anything hits you.
IMHO damage control/fire suppression measures are a very great deal more important than armour protection.
